Hearty Pork Chili

3 lbs (1.5 kg) Canadian Pork Braising Cubes
1/4 cup (50 ml) all purpose flour
3 Tbsp (45 ml) canola oil
4 large onions, finely chopped
4 cloves garlic, finely chopped
4.5 oz (127 ml) can mild green chilies, rinsed, drained, chopped
3 Tbsp (45 ml) chili powder
1/2 tsp (2 ml) EACH ground cumin and dried oregano
1/4 tsp (1 ml) EACH cayenne and pepper
28 oz (796 ml) can crushed plum tomatoes
1 cup (250 ml) water
2 cans (19 oz/540 mL each) kidney beans, rinsed and drained
Toss pork cubes with flour to coat. Heat oil over medium heat. Brown pork in batches. Remove pork; set aside. Drain all but 1 Tbsp/15 mL fat from pan. Add onions and garlic; cook gently until tender, about 5 minutes. Add pork cubes, chilies, chili powder, cumin, oregano, cayenne, pepper, tomatoes and water. Stir and bring to a boil. Reduce heat; cover and simmer 2 – 2 ½ hours until meat is very tender and mixture is thick. Stir in beans and heat thoroughly. If necessary, heat uncovered to thicken further. Serve over rice or in flour tortillas topped with chopped green onions and grated Cheddar cheese, if desired.
