Sweet and Sour Pork Ribs – Slow Cooker

5 - 12 hours (in slow cooker)
3 lbs (1.5 kg) Canadian Pork Side Ribs
2 cups (500 ml) brown sugar, packed
1/4 cup (50 ml) all purpose flour
14 oz (398 ml) can pineapple tidbits in juice, undrained
2 Tbsp (25 ml) EACH soy sauce and ketchup
1/2 cup (125 ml) white vinegar
1 clove garlic, minced
1 tsp (5 ml) grated fresh ginger
Cut ribs into 2 to 3 rib sections. Combine remaining ingredients in a small saucepan. Heat and stir over medium-high heat until boiling and thickened. Layer ribs in a slow cooker, spooning sauce over each layer. Cover and cook on LOW for 10 – 12 hours or on HIGH for 5 – 6 hours until ribs are very tender. (To thicken the sauce after removing the ribs, pour the juice into a saucepan. Add 2 Tbsp/25 mL cornstarch dissolved in 1/4 cup/50 mL water, then bring to a boil.)
