3 lb (1.5 kg) Canadian Pork Rib Roast or Rack of Pork
3 Tbsp (50 ml) butter
1 Tbsp (15 ml) garlic powder
2 tsp (10 ml) EACH dried oregano and thyme
1/2 tsp (2 ml) EACH salt, white pepper, cumin and cayenne
1/4 tsp (1 ml) nutmeg
Place pork roast in a shallow pan. Combine all seasonings and rub well over all surfaces of roast. Roast pork at 325°F (160°C) for about 1 3/4 hours or until meat thermometer registers 155-160°F (68-71°C). Remove from oven; cover with foil and let stand 10 minutes before slicing. Serve with red and green peppers and okra.
For more intense flavour, place pork roast in a shallow dish; rub with seasonings; cover and refrigerate several hours or overnight.
