2 lbs (1 kg) Lean Ground Canadian Pork
1 cup (250 ml) chopped onion
1 cup (250 ml) dry breadcrumbs
1 egg, beaten
1/2 cup (125 ml) bottled sun-dried tomato-flavoured salad dressing
1/2 cup (125 ml) black or green olives, sliced
1/2 cup (125 ml) Mozzarella or Provolone cheese, cut into cubes

Preheat oven to 375° F (190°C). Cut a rectangle of wax paper and line bottom and sides of one loaf pan. Combine all ingredients in a large bowl; add salt and pepper to taste. Pack mixture into loaf pan, and bake uncovered for 1 1/4 – 1 1/2 hours or until centre of the meatloaf registers 160ºF (71ºC) on a meat thermometer. Let stand 15 minutes before slicing. Serve with rice and seasonal vegetables. Note: Pork mixture can also be used to make meatballs or burger patties.
Note: Always cook ground pork to well done.
